I don't normally peel sweet potatoes before boiling; I slip the skins off after. However, I did peel them the other day. I was quite impressed with the colour. Okay, I knew the colours before, but the slivers of dark mauve next to the peachy orange just struck me. I wouldn't have thought of putting them together naturally. Perhaps I will keep this in mind as inspiration for a future day. What do you think?
